Dietetic Internship- Coordinated
As a part of my curriculum, I have completed a 2 year Coordinated Dietetics Internship through Utah State University. This gave me the opportunity to learn from some of the best facilities within the intermountain region in northern Utah. My internship has included Clinical, Research, Food Service, and Community. The following sections will outline what I have done and a couple of projects that I have participated for each.
Clinical
Skills Acquired:
Work Example: During the NICU rotation at IMC, I assessed an infant that had complications with prematurity and Necrotinzing Enterocolitis. I used this example as my advanced case study. See advanced case study below.

Food Dudes USU Kid's Juice Undergraduate Research & Creative Opportunity Grant Skills Acquired:
Work Example: During my time with the Center for Advanced Nutrition at USU. I was able to apply for and carry out an undergraduate research grant on my own. My project was on: "What signals are responsible for the Exercise-induced increase in the Endoplasmic reticulum Unfolded Protein Response (UPR)?" I discovered new talents and learned a lot because of this experience. On the left is the final report that was submitted to USU on my findings. |
Food Service Management
Skills Acquired:
Work Example: While at Logan Regional Hospital. I had the opportunity of working with Lee Darley on a project that helped measure how much food was being wasted. I was able to develop a tracking form that was filled out after each meal. This was used to track and target possible times/areas in which food is wasted the most. As budget cuts occur, this puts more financial stress on the kitchen. Reducing the waste increases the "lean" culture and helps save money. Below is an outline of the findings.

Community
Skills Acquired:
Work Example: For a project, my class and I put on a luncheon sponsored by Food $ense that taught individuals the importance of eating a hefty meal for only $1.50. It was quite the undertaking. We had to not only refine our food service skills, but also our education skills. My strength is in the sciences, and so this took me out of my comfort zone. My role was to provide the participants with information on how to shop cheap and get the most "bang for your buck". Below are some handouts I created that were given to the participants to take home.
