Fostering Growth: A lunch program for high school students
Spring 2013:
Cache High School in Logan. UT currently does not have a lunch program, and the students must provide their own foods. Most foods are processed foods that are easily heated in a microwave or locally bought and convenience stores close to campus. As a way to promote healthy eating and increase nutrition, an organic greenhouse and garden were implemented to help increase the fruit & vegetable intake.
Since Fall 2012, the greenhouse has been in operation has been able to currently support lunches once a week. We have begun planting the garden for autumn harvest and will freeze the produce grown for the following winter to help increase the number of lunches available to students each week. Our goal is to provide the students with 5 days of meals. We know that this will lead to not only their success in the classroom, but will instill good habits for the rest of their life. Team Dietetics: Relay-ing for Life
April 2013:
My classmates and I participated in the 2013 Relay For Life at the Utah State University Fieldhouse. Just last year the USU Dietetics Program lost Nedra Christensen, our Clinical Internship Director, to a long fight of cancer. We gathered a great team together made up of Dietetics Faculty and Students and raised money to support cancer research. We spent the night laughing, talking, and remembering all the people who have fought or are fighting cancer. My grandmother, who died of breast cancer in 2002, and my cousin, who has fought leukemia for the last 3 years, were my inspiration.
As nutrition professionals in training, we understand how big of a role nutrition can play in cancer prevention and treatment. Proper nutrient stores and intake can heavily influence the fight. We strive to help educate cancer patients about the importance of eating healthy and often throughout their fight, which will better their chance of survival.
